One approach would be to use the method described in Hauk et al. (2006), which is just to regress the EEG at every (channel, sample) point on the reaction time for the corresponding trial (and any other independent variables of interest); that yields an event-related regression coefficient which can be quantified in the same way as an event-related potential (amplitude, latency, etc.).
