Dear Alistair,
the simplest way is to manually define your channel labels in the channel editor (menu item "Channel location") after importing your raw data. Simply enter the channel labels ("f3", "fz" etc...). When you are done, then press the button "Look up locs" (still in the channel editor) and it will look up standard 10-20 coordinates for these channels. Note that you must define the same number of channels in the channel editor as the raw data contains otherwise EEGLAB will complain and ignore your newly defined channel locations.
