having one trial is highly unusual. However, you should be able to tell
eeglab to remove baseline via the gui.
Alternatively, you could just compute this in matlab, by accessing your
1-trial EEG.data structure, and then

A. Compute baseline mean for each channel
B. Subtract baseline mean from each post-baseline timepoint, for each
channel.
C. Then feed your modified single-trial data structure back to eeglab for
ERSP or other computations.
(Alternatively, make a second EEG2 structure, and then feed EEG2 to the
function for metrics computation.
