It really depends on the papers you are looking at, and the goals set
forward by your advisers. If you find an article you wish to emulate in a
high-quality journal (ideally) then you should try to mimic their methods
closely. There are no "correct electrodes" for color or music note
classifiaction, though of course, posterior brain regions are more involved
in visual processing, and auditory regions are more involved in auditory
processing. Note that EEG channels pick up data from all parts of the
brain, not just the part of the brain over which they are placed.

Because the emotiv system is a sparse eeg (and relatively low quality
consumer grade) it is probably best if you use all available clean channels
and go from there.

If you are a newbie, your best bet s to first take the required time to
read EEG books from Steve Luck, from Micheal X Cohen, review basic
processing tutorials/powerpoints/videos on the eeglab and erplab websites,
and definitely practice with eeglab tutorial data and tutorial steps. All
these resources are googlable. EEGLAB, ERPLAB, and Cohen all have extensive
free information online.
