Hello Konstantinos, quick thoughts below....
That is unusual.
If you are having extreme jumps, there may be an issue with your recording
in general or at different times in the recording. Some small jumps are
usual. Jumpiness between epochs depends partly on the quality and stability
of the recording, and the specific kind of protocol, and the length of the
epochs.
If you are doing an analysis that pulls out metrics for each epoch, and
averages across epochs, you should mitigate the effects of the jumps.
You may want to remove the epochs with the largest jumps.
If you are not currently, you may want to use ICA cleaning or try ASR to
better "normalize" the data (before deciding on your final epochs to keep).
You may want to make your epoch rejection harsher so as to leave epochs
with less jumps.
Last, if the data "away from the edges of the epochs" is more similar (less
jumps) across the epochs, you may want to trim/chop of the ends of your
epochs.
