to remove some component use the command TOOLS>REMOVE COMPONENTS in the main EEGlab panel; you will reject some component after see them (with PLOT>COMPONENTS) or the component's map (TOOLS>REMOVE COMPONENTS BY MAP); also will be very easy come back into the original EEG domain (the procedure is automatic).
About the EEG structure, you have 4  *ICA* fields: data (the original dataset), icaact (the components), icaweight (the  weight matrix from EEG data to the components) and icawinv (the weight inverse, used in the component's map).
